mediterranean chicken salad

This chicken salad is perfect and refreshing on a hot summer day. The best part, it’s guilt free! 

Ingredients

  • 1 cup nonfat plain Greek yogurt
  • 1 lemon, juiced (or more to taste)
  • ½ tsp ground cumin
  • ¼ tsp crushed red pepper
  • 3 cups cooked chicken, chopped
  • 1 cup red bell pepper, chopped
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 can chickpeas, rinsed and drained

The process

  1. Step 1

    combine yogurt, lemon juice, cumin, crushed red pepper. set aside.
    combine chicken, red bell pepper, red onion, cilantro and chickpeas in a large bowl. add yogurt mixture and toss to combine.

nutrition information per serving: (makes 6 servings)  230 calories, 3g total fat, 1g saturated fat, 20g carbohydrate, 4g fiber, 29g protein
