This chicken salad is perfect and refreshing on a hot summer day. The best part, it’s guilt free!
Ingredients
- 1 cup nonfat plain Greek yogurt
- 1 lemon, juiced (or more to taste)
- ½ tsp ground cumin
- ¼ tsp crushed red pepper
- 3 cups cooked chicken, chopped
- 1 cup red bell pepper, chopped
- ½ cup red onion, diced
- ¼ cup fresh cilantro, chopped
- 1 can chickpeas, rinsed and drained
